tonight i came home from work to the pleasant surprise of my wonderful husband cooking dinner – straight from the cookbook of one of our favorite hometown Tampa Bay Restaurants, The Columbia.
For some Tampa Bay Colombian flavor here’s the recipe, exclusive from the Columbia Cookbook.
For Shrimp Columbia, a.k.a.
1 large onion
1green pepper, chopped
3 garlic gloves, chopped
3/4 cup olive oil ( i only used 1/4 cup)
1 cup whole tomatoes
1 bay leaf
32 med shrimp
1 c chicken consumee or stock
20 small mushrooms
1/2 c diced ham
1/2 c red wine
1 tsp salt
Heat olive oil in skillet. Saute green pepper, onion and garlic over low heat.
When tender, add tomato, then bay leaf bringing to a boil & then cook for 3 min.
Add salt mushrooms, ham shrimp, and consomme/chkn stalk.
Cook for 5 min.
Garnish with red wine and serve.
We had fresh French Baguette on the side, but the obvious Cuban bread or any other dipping bread would be a great substitute!
